Your chef masters the cuisines that define our basins. Mediterranean side: Provençal bouillabaisse, Italian antipasti, plancha-grilled fish. Pacific side: Caledonian bougna, raw fish in coconut milk, Ouano prawns. Fusion possible, purism respected.
